Sometimes I just want a big stack of pancakes for breakfast before I start work, but weekdays don’t lend themselves to leisurely meals. These pancake muffins are a perfect way to get that brunch taste during a gotta go-gotta go morning. Simply make your favorite pancake batter (I used this whole wheat pancake recipe), grease your tin, fill each cup 1/4 of the way, add fruit (i.e. frozen berries), and pour batter to fill a total of 3/4 of the cup. Bake for 10-15 minutes at 350 degrees until golden brown and you’re done!

I used olive oil spray, but I’m starting to shift to brushing with grapeseed oil (which can withstand high temperatures). Something about oil in an aerosol can isn’t feeling right to me now that I’m trying to eat more naturally and with less processed ingredients.
i have been trying to stay away from cooking sprays and got grapeseed oil too.

Thanks, Dixya! And I agree. It’s also so nice that they all get done at the same time. My main gripe with regular pancakes is that either they get cold or you make them fresh and get stuck at the stove while everyone else eats. Problem solved with these!
